Clear advise has been given to you at posts #9 and 11 as to how to set out the grievance and what to concentrate on. Age is a protected characteristic, so I would really advise that you lead on that in terms of your grievance then as has been set out at post #15 deal with the work load issues which are causing your work environment to be stressful to you and that maybe a health and safety issue.
I know it is difficult but keep the emotion out of what you write, make it as factual as possible and back-up what you say with evidence about the incident/s you are making your grievance about.
