'Short stay' PCN

Hi
After some advice on how to defend a country court claim for a PCN from 22/1/2016 please! Have ignored everything till now and have no copies of any letters etc. This happened at work and the parking enforcement bloke is very short. I drive a big van and my boss (6'1") has stopped him issuing a ticket previously as he is too short to see the dashboard properly. Very greatful for any advice! Thanks
