  • Dinner Party Recipies

    A few of us were chatting and have been swapping recipies for a good old Dinner Party.

    So here's a thread for us to post them on: :grouphug:

    STARTER:

    SMOKED MACKEREL PATE SERVES 4

    8 ox Smoked Mackerel Fillets
    1 oz Butter
    1 Small Onion - finely chopped
    2 tbl spoons flour
    1/4 pint Milk
    2 tbl spoons Lemon Juice
    1/4 pint Double Cream - Lightly whipped

    Flake the fish keep to one side.
    Heat the butter in a pan, add the finely chopped onion, cook for 5-7 mins (don;t let it brown).
    Stir in the flour, cook for further 2-3 mins, gradually stir in the milk, stirring all the time cook for 1 more min.
    Put in a bowlm stir in the Lemon Juice (add some garlic season to taste if you want to).
    Add the fish to the sauce, the beat till its smooth, or of you prefer slightly chunky.
    Fold in the lightly whipped cream.

    Job Done.

    All you have to do now is put it in separate ramekins or in a large dish, its your choice. You can then dress it with shell on prawns, or sliced egg on top, or sliced peppers. Its your choice.
    Cover with cling film and put in fridge to chill, until you are ready to serve.

    Eat with nicely toasted rustic bread and butter.

    *You can make this the day before.

      STARTER:

      French Oinion Soup with Blue Cheese and Brandy. Serves 6

      3 ox butter
      3 tbl spoons olive oil
      1/2 tsp caster suger
      1 1/4 lb onions - slice thinly into rings
      2 1/2 pints good quality beef stock
      3 oz blue cheese
      4 tbl spoons brandy
      5 tbls coarsley ground walnuts
      salt and freshly ground pepper

      6 slices of French bread approx 1" thick
      Butter for spreading
      Grated Cheddar

      In a large saucepan, heat 1 1/2 oz butter with the olive oil and caster suger. Add onion rings and cook over a low heat for 15-20 mins stirring frequently until the onions are a golden brown.
      Gradually stir in the beef stock and bring to the boil. Lower the heat, cover the pan and simmer gently for about 1 hour. It should have reduce to about 2 pints by now.
      Heat the grill to high.
      In a bowl combine the blue cheese, remaining butter and 2 tbls spoons of the hot stock from the soup. Mash with a fork to a smooth paste.
      Stir the blue cheese paste, brandy and chopped walnuts into the soup until they are well blended. Season with salt and pepper.
      Toast the slices of french bread and spread them on 1 side with butter and put some grated cheddar on top and make small cheese on toasts under the grill.

      When you are ready to serve place a piece of the cheese on toast in a bowl and ladle the soup over it.

      This can be made the day before and kept in the fridge overnight.
