I'm confused (but doesn't take much!)
You parked there five days in a row for 8 hours each day.
According to the signs (only partially legible on google earth) this is a carpark with a 2 hour maximum stay.
I'm wondering why you have only received one parking charge and not one for each day.
Can you please explain the situation, and post up pictures of every different sign in the park.
I couldn't read the signs fully on Google Earth, but I think they might be insufficient and so can be challenged.
However we do need clarity

Was there for around 5-6 days and used a app to pay for extra parking called RingGo as on site I’m pretty sure the maximum was only a couple hours I paid for all days but the one I forgot and got the PCN attached is photo of what it looked like, signage wise it would be hard for me to go back and actually take any photos due to distance.

as it stands your choice is to either pay their demands, or await a court claim which you can defend.
Depending on what the signs state (and they will need to supply copies if they issue a court claim) and whether or not they make a hash of their claim (not unknown) you may be able to defend their claim.
However it will take work, and probably cause a certain amount of stress.
Sometimes, if a strong defence is made, they discontinue their claim, or just do not turn up at court.
