We called our Solicitor who told us for a Grant of Probate will cost £750 plus VAT (£900)

This is extortionate.

Its not just a probate form you fill in HMRC have to be notified.
Having completed probate forms twice in recent years, (plus iht400 for HMRC) .I can say its quite straightforward if, for example theres a will,a copy goes to HMRC , the original must be sent to the Local probate office with the probate application,(PA1) you wont get the original back, its archived, but you will get a copy with the grant of probate .If theres no will the relevant boxes are filled in. The applicant on the will must be able to know all the family details as there are questions about members of the deceased family on the forms,deceased and survived. Both HMRC and probate are filled in case there is any death duties to pay ,Not in this case it appears the estate is suitable for an IHT205 form. Its worth doing yourself and taking your time, as it cost about £100 for the probate and about £2 for the copies of the grant, this depends how many you need for banks and financial institutions. I submitted one in January and attended the probate court in feb , so it doesnt take long. On the HMRC website when you open the forms you can put the figures in the boxes and it will calculate your figures. You can print but not save. The banks take about two or three weeks after getting the grant before they transfer money to the applicant.
