Automatic Unfair Dismissal - advice and support appreciated

I would certainly not leave it too long to report this to the DPO as unduly delaying could call into question why you left it so long having discovered the issue and secondly delay any investigation internally.

They have a duty to as part of the ET process to disclose all relevant documents and they cannot be seen to withhold them because of the complaint that you have made.

Thank you. I will go ahead and send the initial complaint letter. I drafted it today - the only worry I have about it is whether I should mention how them withholding the information (which I have only been made aware of in the last few days upon seeing their bundle) has resulted in me not having access which would have otherwise helped me to prepare my employment tribunal case. If I say that in the letter to the DPO team, would it be wrong of me or legally backfire on me to mention the ET proceedings? Or would it be understood that they would likely already be aware of it given the ongoing duty of disclosure for the ET which the DPO would surely be involved in anyway..?

I would suggest but having no knowledge of the organisation, cannot say for certain the the DPO may at least be aware of your SAR request. As to whether or not they know of your ET claim I would not like to say.
