You are not obliged to send a signed letter, and if you are worried about them lifting your signature, you could simply sign the letter that is not your ordinary signature (a squiggly line maybe or use your non-writing hand?) and if the documents turn with that exact signature on then you have them on for fraud If you went this route then I would probably send it by email with the signed copy letter attached, that way there is a paper trail.
