A N61 is an order to complete a statement of earnings (N56 form) and you have 8 days from the day it is served on you to return it. Part of the details on the N56 are your address which I assume would now be overseas. As to how that then affects what or if an order is made I am not sure, but without a UK employer from which an attachment of earning can be made I would have thought it would not be possible to proceed.
If you would like a one-to-one expert consultation with me on your employment issue than I can be contacted by emailing admin@legalbeaglesgroup.com

I do my best to provide good practical advice, however I do so without liability.
If you have any doubts then do please seek professional legal advice.

Thank you very much for your kind response. In that instance, would it instead be possible to put a charging order on my UK property?

You would need to speak to the creditor / judgment holder as it is a form of enforcement to secure repayment of a debt.
