    Crash's Chinese-style chicken & veg rice:

    Need:

    Some chicken (baby chicken/chicken breast..whatever)
    1 whole pack of butter - Anchor is usually the best
    1/4 to half a pack of frozen veg, or fresh if you're really good
    Garlic
    Ginger
    Garam masala
    Pepper
    Salt....all of these to taste...I never measure, I just chuck it it

    Plain rice...how much depends on how hungry you are
    Soya sauce
    Chinese salt

    1. Boil the chicken for a few mins until it's all white
    2. Chuck in butter, garam masala, crushed garlic & ginger, salt, pepper and leave it to boil, then simmer for about 15 mins
    3. Throw in veggies, then bring to boil and leave to simmer until everything is beginning to fall apart...especially the chicken.
    4. Take off hob, check chicken is cooked, remove bones if there are any, and separate chicken into small pieces. Leave to the side.


    5. Boil rice (add salt to taste) until just about cooked
    6. In a pot put a layer of rice, then a layer of the chicken and veg mix, then another layer of rice, then a layer of the rest of the chicken and veg mix, then finally another layer of rice on top. Chuck a load of soya sauce and chinese salt on top of the rice, cover and cook for 5-10 mins on low heat.

    7. Remove off heat, mix throughly and eat it all.....I promise it'll be worth it

        heres another one....Deviled Chicken :carrot:

        These quantities serve 4 so adjust accordingly.

        4 Chicken Thigh portions skinned
        salt, pepper, dry mustard,cayenne
        Whisky 3tbsps

        Marinade
        Soy sauce 1tbsp
        Tomato ketchup 2tbsps
        Apricot or peach jam 2tbsps

        1/2 small red pepper
        1/2 small green pepper
        1. Rub chicken over with seasonings and place in shallow oven dish.
        2. Spoon whisky over chicken and leave for one hour.
        3. Mix marinade ingredients and spoon over chicken.
        4. Place in pre heated oven (375f/190c/mark4-5) for approx 1 hour until cooked through, baste occasionally-top with pepper rings in last 10 minutes.
        Serve with rice or potatoes and a salad.
        Enjoy
