If I send their letter before claim reply form back as “I need more Information” is this acknowledging the debt in writing? Also will this delay the process to allow it to be statute barred next month? Many thanks

No you aren't admitting the debt, just asking for more information 'letter before claim reply form back'.

You can send them 'Without Prejudice' offer letters, make sure that is written on the letter.

It means that, if the matter is taken to Court the Judge / Court won't consider the letters until the case is over.
Make sure you get Proof of Postage.
