I am struggling to find caselaw in relation to non service of a statutory demand.

The only one i have found thus far is Canning v Irwin Mitchell http://www.bailii.org/ew/cases/EWHC/Ch/2017/718.html

Can anyone offer any similar cases that they could share with me please?

You probably need to provide more details before any more specific help can be given. Presumably you're disputing that it was served whereas the claimant is stating it was ?
