I just wanted to pay him what he was owed and not be out of pocket to pay someone to finish the work.

When you complete response it will be you intend to defend part of the claim.

Obviously you will have to pay for the materials and for the work so far carried out.
If the work had been carried out to a reasonable standard, as you cancelled the contract you would also have to make good his loss of profit on the work yet to be carried out.

On the other hand he has caused unnecessary and excessive damage to your bathroom whilst working on another contract.
It was this damage which has encouraged you to terminate both contracts as you lost confidence in his work
You need to itemise this damage.
You can then enter a counterclaim for this damage.

If you are lucky this matter will come to an acceptable compromise at mediation stage.

PS at the mo' having trouble with broaband dropping in and out, so may be off line for substantial periods.

Re the boiler installation, the important thing is whether or not the boiler was fitted (or in this case, going to be fitted, as the installation has not been completed) in accordance with manufacturer's instructions.
The boiler (WB Greenstar 30i erp system boiler?) probably has an internal bypass.
It is acceptable to connect the condensate to an external waste pipe, though the external length should be as short as possible & increased from 22mm to 32mm.
The external pressure relief pipe can quite easily be modified to discharge onto the wall or possibly extended to discharge at low level.
The powerflushing could be costly if priced seperately, but many installers now have powerflushing equipment and so include a lower price within their quote.
