Is there a particular format that this needs to be documented? I understand it needs to be in response to the claimants particular of claims. Any advice would be greatly appreciated.

Assuming that you are in the UK, where you will need to write a Defence, I recommend you to read this guide for litigants in person written by the Judiciary of England and Wales:

My next step is to write a defence and require an understanding of how this is presented? I am doing this as a lone litigant so I do not know where to start.
