If a person, from an EU country, is extradited to the UK for allegedly having sex with a minor, in spite of the minor saying that they were older, and looking older than they were, will the extradited person still be done for having sex with a minor?

If you mean "prosecuted in the UK" when you say "done" - then yes. An application to seek a European Arrest Warrant required (in general layman's terms) enough evidence to lay a charge. But if you mean "convicted" then that is a matter for the jury once all the evidence has been heard.
