I am executor of my mother's will. The house is sold, money is in the bank and I have distributed the legacies to all the adults. There are two children both early twenties but they have a mother who has created email addresses and is basically not honest. I have asked to meet the children to give them their cheques, which are sizable amounts and ask them to sign a receipt so that i know the money is in their hands. She is against me doing this and has asked for a bank transfer. She has written texts on her son's email address so I am wondering how else this can be done. Is there any way I can ensure the children get their money and I get receipt?

If the "children " are in their twenties, presumably they have their own bank accounts.
Have you requested they send you details of these so you transfer the funds directly?
If you do send cheques, you automatically have a receipt.
If the mother intercepts the cheques and converts them for her own use, that is not your problem.

We went to the bank with the details which have been given, supposedly from 'their' email addresses and there's no match in name, not even a partial match so we cannot send them electronically. Goodness knows where it would go. In these emails they say that they do not want to meet me, they just want the money to be transferred though BACS. I have no contact details for them. In what way would I know definitely that the 'children' got their cheques? And if she intercepted the cheques and converts them for her own use how am I fulfilling my executor role in the eyes of the law? They are large amounts of money for youngsters

You refer to "children" and "youngsters", but they are both in their twenties and therefore fully responsible adults.
Send them crossed cheques made out in their full names eg John Joseph Bloggs to the address they have supplied.
Send first class with a free certificate of posting.
That is all you need to do
