    for something spicey, one of the few packet mixes I'm known to use

    chicken fajitas

    2 - 4 chicken breasts
    1 large onion
    1 red pepper
    1green pepper
    1 tbsp oil (again olive is best)
    1 packet fajitas mix

    cut chicken into thin strips
    same with the onions and peppers
    heat the oil then fry the chicken over a med - high heat for 5 - 7 mins or untill golden brown.
    add the onions and peppers and continue to fry for another 2 mins
    sprinkle over the packet mix stir in (tip if it sticks add another dash of oil)
    turn down the heat and cook for a further 2 mins. if you want slightly crisper veg..add the mix at the same time as the veg.

    then serve in tortillas ( i throw in a bit of mixed leaf salad and drizzle a little soured cream over the mix before wrapping )


    and there ya have it.. another family fave from the tempty household

        OK i am cooking tonight yehhhh...

        got my chicken...a curry sauce (in a jar dohh) going to dice some spuds throw it alltogether in a pan and hope for the best.

        told hubby i was cooking tonight....his reply you sure you dont want a take out !!!!!!!! think that says it all....lol

          Tender pork Loin stakes

          line a baking tray with tin foil (leaving enough to be able to wrap meat)
          place pork loin stakes onto the tray (ideally these should be a good cut nice and thick) you can use chops if you prefer.
          brush the steaks with honey (any will do... i use clear runny)
          mix up a little stuffing mix (of your choice.. i use sage and onion) and place a thick layer on the meat.
          top off with a good dollop of apple sauce (optional)
          wrap the meat and place tray into the middle of the oven gas mark 5, cook for 25 mins.
          finally unwrap the meat and place the tray under the grill for 2 - 4 mins to brown.

          I usually serve this with either boiled or mashed potatoes and veg of your choice.


          Let me know if yer getting fed up with my daft recipes....... got hundreds of em like this ..lol

            OK quick update.....

            i cooked ..yes it was stuck to the bottom of the pan but i saved it....

            im still here....son and hubby dont feel to good...

              Mash pots and veg:

              1. Peel some potatoes and cut them into small pieces - chuck into a pan of boiling water
              2. Add some veggies (frozen will do if you haven't got fresh)
              3. Little olive oil in, as well as salt to taste
              4. When done(fork or knife should cut through potatoes easily), chuck into a bowl, add butter/marg, more salt and pepper to taste and some milk for added consistency
              5. Mash the life out of it
              6. Pour into an ovenproof dish, cover with grated cheese, and grill until cheese is brown.

              Bootiful.

                  Pasta Special
                  20 mins start to plate

                  minced beef
                  onion
                  mushrooms
                  garlic
                  peppers
                  whatever else you fancy chucking in (or leaving out)
                  No quantities given, just make it up as you go along, depending on your taste.
                  Jar of pasta sauce/bolognese sauce or whatever you fancy (Tesco's is nice and only 56p)
                  Pasta (rigatoni or penne works best I think)
                  Packet of grated mozzarella cheese

                  Brown the mince, onions and other stuff in a pan. Drain off the fat, then chuck in the pasta suace, simmer for a few mins.
                  While this is happening, cook the pasta till its almost done

                  Drain pasta

                  Chuck bolognese mix and drained pasta into an ovenproof dish and give it a good swoz round so all the pasta is coated, and the mince gets down the pasta tubes. Cover with entire packet of mozzarella

                  Bung into preheated oven for about 10 minutes till the mozzarella goes all gooey and stringy ( I find this is about the same time as it takes to cook a garlic bread to go with it)
                  You can't go wrong with this everyone loves it (unless youre a vegetarian but you could use quorn I suppose)

                  Serve with garlic bread and a large glass of wine - scrummy
                  Is no longer here

                      But of course Well actually, anything alcoholic is compulsory in my house! I know I'm crap at housework but there's never a speck of dust on the booze bottles - they don't stay there long enough!!!!!

                      But the recycling bin is usually full..........have to sneak off to the recycling place when no-ones about lol so they can't see how many bottles and cans we chuck in

                        ok, I need abit of help now - i'm not too bad at cooking, if i've got a recipe to work to, but I need recipes that don't involve the use of an oven! [it's gone kaput and i can't see the point in getting a new one yet when i'm having a new kitchen soon].

                        Any recipes that involve only the use of hob, grill or microwave, and again, nothing to fancy cos one of my kids can be fussy!

                        Any help would be great, cos i'm sick of fish finger sarnies, jacket spuds [in microwave], spaghetti on toast and ready meals! Cheers

                        [Also living to a budget, so pot noodles for 3, 7 days a week, is out of the question Delta pmsl]

                          Hi pj you ok?
                          I know it's not quite winter yet but I love home made soups, if you start with a good stock and you can buy them from supermarkets now fresh. You can then add vegetables you like and small pasta shapes. You can make tomatoe, mushroom, french onion, brocolli and cauliflower. They are all lovely with some nice crusty bread and filling too.
                          A good old pan of tata ash always goes down well and with dumplings in even better.
                          loads of pasta dishes can be done on the hob.
                          If you like fish the best way to cook that is in the microwave.
                          If you have a steamer there is no end to what you can do, hope this as helped a little Enaid xx

                            Hi peej, my mash pots recipe can be grilled in a micro too if it has that function. I don't use my oven, I use my microwave for everything, so it can be done in that too

                                I have thousands of yummy cheap healthy recipes but ...... they are all vegetarian so doubt anyone will want them!
