Simply put I am the beneficiary of an Estate (Value 1.7 Million) due to my father dying Intestate, however my mother (the administrator) has forged my signature onto a Deed of Variation to keep control of the majority of the Estate.. now it turns out she is trying to do the same on land registry forms to keep a 50% share in what she knows she has to sign over to my self, what is the best coarse of action, or "How would you deal with this issues"
How would you deal with this!

Condolences on the loss of your father.
If he died intestate can you please explain how you are the beneficiary.
Under the rules of intestacy your mother (assuming she was your father's wife or civil partner as she has letters of administration) should be inheriting the major portion of the estate.
However to answer your questions you should write to the probate court and land registry stating that your signature has been forged and report the fraud to the police.
Unless of course you still have a good relationship with your mother which you wish to preserve, in which case either acquiesce in her actions or warn her that if she doesn't cease her fraud you will report her as above

Of coarse my mother will inherit major portion of the estate as she should, as a sibling I would automatically get a share of any remainder I believe? I read the rules as follows? meaning as one of three brothers I would have a 1/3 share in the 50% left..? I hope I am right..
Where there is a surviving spouse and children, the spouse is entitled to the ‘personal chattels’ (movable property, but not money) of the deceased and a statutory legacy (currently £270,000), including interest from the date of death. The residuary estate, if any, is then divided equally between the spouse (50%) and the children (50% divided between however many children there are).
Now to not allow this to happen my mother has forged my signature on to a deed of variation, however knowing she cannot have everything she has then tried to do the same with any inheritance left so as to control 50% of any land signed over again by adding my signature to a legal document, she has then added a life interest so as to have full control until her death... sorry gets very confusing...

Your initial post was unclear and I had the impression that you were the sole beneficiary.
You refer to yourself as a sibling so has your mother forged the signatures of your sibling(s)?
Are they aware of your mothers attempt at fraud, and if so what do they think about it?

Sorry for any confusion...
She forged the signature of two siblings
The third says No, however it has became apparent he along with my mother are the main beneficiary's of any changes via the Deed of Variation, so does not want things changed!
I have attempted to sort this with my mother and siblings but have got nowhere.
For reference the other sibling with a forged signature was all for sorting it out with myself but has now retracted on the promise of a bigger proportion of the estate should he keep quite, however he is very gullible it will never happen, plus live's with my mun so homeless if disagrees...

Really you need to obtain professional advice.
Reading between the lines I'm sorry to say it seems that your relationship with your mother is well and truly broken.
Just threatening to write as first advised isn't going to work, nor will letters to probate court have any effect.
You may have to apply to the court for your mother to be removed as executor, but this should be seen as a last resort.
Negotiation is the way forward, either directly or through an intermediary.
As the grant has been made application would be to the High Court under sec 50 Administration of Justice act 1985
Costs could be high
