Whether or not diabetes controlled by diet alone would be considered a disability under the 2010 Act is a decision to be argued about.
On a practical level, it seems to me the OP has to "eat on the go". If that means he might put his health at risk he will have to decide if that is a risk worth taking. If the shop is not busy enough to employ more staff to provide cover, his employer doesn't have much choice either.
The Clark v Newquest Media doesn't really apply to this case as Melanie Clark controlled her diabetes by insulin injections four times daily.
