I started work for a top two supermarket on a 16 hour contract September 2021. I asked to go full time in November. I have been scheduled every week 36hours. But it seems they have been simply giivng me many extra hours as overtime. I have previously mentioned it and asked directly to the manager at the weekend to update my contract to reflect my scheduled hours. Otherwise I will only get 16hr holiday entitlement. What can I do about this if they don't budge? Even zero hour contract workers are entitled to 5.6 weeks based on average hours

When you asked to go full time back in Nov were you given a revised contract of employment or a variation to your contract letter to reflect youe increase in hours. HR won't do anything without supervision from a line manager. So there is no hope there I think. If I continue to work 36hrs a week, I am I still entitled to at least 5.6 weeks holiday/pay? On my current contract it's only about 12/13 days (96hrs).

If the extra hours you are working are being treated as overtime not your contractual hours then they do not need to be included for holiday entitlement.
Your holiday pay however should take into account the overtime you are paid.
The next thing you may need to consider is to raise a grievance.
