I have worked for a full time, 40h a week. Since I am on sick leave my holiday entitlement amount doesn't go up. I have sent an email asking why, and the response was 'you will not accrue holiday pay on top of sick pay this will only be generated along with hours' - but I am on sick leave, so my holiday should go up. On my payslip I have that I have worked for 0h. Any advice?

You cannot be paid holiday pay and sikc pay at the same time your employer is correct. You can request to take holiday whilst off sick and if your employer agrees then your sick pay will be paused and you will be paid holiday pay instead. After the holiday has taken thensick leave can continue if you are still not well enough to return to work.
